Upgrade of Mobile Wood-fired Oven Sees Pizzas Flying Out of the ‘Box’

On June 1, 2022, Peterborough-based mobile catering business, Amo la Pizza, proudly declared to its Facebook followers that it had “upgraded” its mobile wood fired pizza oven.

In the same post, it talked of now having a world-renowned, high-performance and high-quality wood fired oven within its mobile catering horsebox and an oven shipped from Tuscany.  You guessed it!  This is a Valoriani wood-fired oven from Orchard Ovens Professional.

The mobile wood fired oven solution

The oven serving Amo La Pizza so well, whether at events at Grimsthorpe Estate Shooting Ground, Rutland Pumpkin Patch, UCP Freshers Week or in locations such as Stamford, Glinton and Barnack Village, is a Fornino 75 oven. This artisan-built oven, lovingly shaped at Valoriani’s home in Reggello, benefits from being manufactured from first-class refractory clay.

This unique Valoriani ‘cotto’ clay fires up the oven beautifully and provides the consistency mobile caterers absolutely require, to ensure a queue is served quickly and pizza excellence delivered every time.  Valoriani ovens distribute the heat brilliantly, so no cold spots or peaks and troughs in temperature affect the cooking of the food.  Their insulation levels are not only renowned for hugging the heat, to help keep fuel usage down but also avoiding the chef getting any nasty burns that the hot shells of other ovens often deliver.

Other Benefits of the Fornino 75 for mobile caterers like Amo la Pizza

The Fornino 75 has proved a huge hit with mobile caterers, offering the capacity they need to cook a few 12-inch pizzas at a time and being of a weight just perfect for transporting in vehicles like horseboxes, where it’s not just the weight of the oven, but all the other catering equipment and foodstuffs too, that can impact on the chassis.

This authentic Italian oven allows the caterer to turn out a high quality pizza or food item time after time and gives them the confidence of knowing that the finished product tastes just as good as anything that would be served in warmer climes.

Amo la Pizza chose a stylish Fornino 75 oven with a red dome – a striking contrast to its stainless steel surround.  Other ‘standard’ options are cream and black but a caterer can actually choose to have their dome made to order, in any colour that they want or to any design that they conjure up.  Having a mosaic-effect dome is also an option.

The mobile pizza chef and her pizzas

The oven is a huge success and a great ally for pizza chef, Daniela Weston, who underwent special pizza training and who prides herself on the authenticity of both her Neapolitan-style sourdough pizzas and the ingredients used. All are made on-the-spot in her stunning converted heritage horsebox, with recipes typically featuring San Marzano tomatoes, fior di latte mozzarella and a host of other exciting toppings, such as spicy Calabrian sausage, N’duja.

Amo la Pizza started up four years ago, with just five regular pizzas on its menu.  It now offers 13 and can adapt those to suit individual preferences.  Having had its Fornino 75 for 8 months (as of February 2023), it has now equipped itself with an oven that will be with it for many years to come, creating the authentic product so important to the brand.  Perhaps this contributed to Amo La Pizza winning ‘Best in Show’ at the Burghley Christmas Fair 2022.

What this mobile caterer says about her wood fired pizza oven

Daniela Weston says, “The service I received from Orchard Ovens was second to none and fantastic from the first point of contact.  My beautifully designed, high quality and super-powerful oven was fitted by two extremely professional members of staff, who were very caring about all they did.  I can’t thank Orchard Ovens enough.”
