stuffed eggs with fresh herbs and mayonnaise


4 large, hard-boiled eggs

Filling ingredients:

1 teaspoon of olive oil

8 black olives

1 tablespoon of capers

8 anchovy fillets

Teaspoon of dried oregano

Good pinch of salt

Pinch of black pepper




Handful of chopped wild rocket



Place small pan of water in the oven and heat until simmering.  Add the eggs and cook for 10 minutes.

Cut eggs in half and remove all yolks, placing these in a bowl.

Blend the egg yolks with all other ingredients.
