Delicious crostini


Half a packet of defrosted peas

Quarter of a packet of defrosted broad beans

Quarter of a packet of fresh mint leaves (no stalks)

150g of grated parmesan cheese

Rind and juice of two lemons  (Use white wine if you want to have extra moisture)

Salt and pepper to season




Blend all ingredients to a smooth paste – leaving a few parts a little coarser

Taste and adjust, if necessary, using more cheese, or mint or lemon

Put in the fridge to chill, for at least one hour
